Default Co signer's liability vs. insurance coverage?

I am looking to finance a new vehicle, but due to a recent blip in my credit I won't be able to finance on my own. My current vehicle is with Allstate and I've been with them for a while, with no accidents, tickets, etc.

Allstate said I would be the only one that needs to be on the insurance, if the other person is just co-signing for me (they might be the primary borrower and I will likely end up as the "co" signer, to get a better interest rate).

My concern is the following:If I get into a major accident, and the other party comes after me, would they be able to go after the other borrower's assets, even though they just were on the loan, but not listed as driver or on the insurance.

If that is the case, would getting a higher coverage help? I just don't want to cause any waves with my co signer.
